Are there even any benefits to using a windowed version of StarCraft?

Or a map editor if you're testing a map you're making.
Okay, that makes sense. But you could do it just as easily with a normal version of StarCraft, as far as I'm concerned. And coRtALoS says that you still have to Alt+Tab to get out of the window, so it's essentially the same thing. Am I right?

No, not entirely correct.
Since Starcraft is set in such a low resolution option, your video must reconfigure each time you ALT-Tab your way out unless, of course, it is in windowed-mode.
I like to take full advantage of a large Display. No wasting pixels here! =D

Find me a 1280x800 mod so I can play Starcraft on my fancy new notebook.

You can't. starcraft.exe is written so it can only play in one resolution. You just have to hope your screen settings will allow StarCraft to stretch to fit the screen.

I know, I was sarcastically bragging about how cool my new computer is.

That would be indeed useful, too bad it doesn't work :(.
