Why didn't you rush him with a pack of footmen when you saw he was teching with archers? Even without defend you should still win unless he's significantly better.
OK 2 things vs that: you should make 5-6 riflemen and castes before he masses hyppos with archers and kill him fast. Usually they do only archers to get hyppos and nothing else. Secondly you may try with riflemen + hawks and 3rdly if he has eve more (which takes a long game) you can get castle and make some tanks.
